Note:
A deba is not always perfectly flat on the left side ('ura'). Very often, there will be a height difference between the tip and the heel. Blacksmiths argue that a slight gap is acceptable and falls within the expected range. They emphasize that the deba is a working tool and perfection is not essential. This batch shows a noticeable height difference, and Tani considers it to be within acceptable limits. We understand that our customers have high expectations, so we have decided to offer these fine knives at a discount. Buyers should expect that the uran is not completely flat. We encourage you to review the photos and form your own opinion before purchasing.
Yuzou Tani is a blacksmith who crafts incredibly fine blades and runs his forge in the Japanese city of Sakai. He forges all his blades by hand and also laminates the steel by hand (ni mai). The steel Tani uses is a high-carbon steel called Aogami #2. It is not stainless and should be dried thoroughly to prevent rust. All blades by Yuzou Tani are single-beveled in true Sakai tradition. These are exceptional blades, and Tani-san is a supplier for, among others, Aritsugu, a knife brand of the highest quality.
