Gyuto

Gyuto knife with a 210 mm blade length (the Japanese version of the western chefs knife)
Hatsukokoro Hayabusa is a stunning knife with formidable performance. The name "Hayabusa," meaning peregrine falcon in Japanese, is a fitting tribute to this exceptional knife series that exudes both power and precision. The blade is thin, and the edge comes with a highly aggressive sharpness. It maintains its sharpness for a long time thanks to the core of the hard powdered steel SG-2 (hardened to 63 HRC). The bolster is integral, and the handle is crafted from pakka wood with red accents.
Core Steel: SG-2 powdered steel (Stainless with HRC 63)
Construction: 3 layers of steel with a soft stainless steel jacket (san mai).
Blade Height: 46 mm
Weight: 192 grams
Edge length: 210 mm
Hatsukokoro Hayabusa is more than just a knife – it is an artistic and functional fusion of tradition and modern technology. A knife series that we highly recommend for those who appreciate both aesthetics and performance in the kitchen.
