Gyuto
A Japanese chef's knife, gyuto, with a 215 mm long blade and extra tall blade (54-55 mm).
The handle is octagonal and made of walnut with buffalo horn ferrule.
The Kurokaze series is a wonderful Japanese chef's knife with substantial weight and beautiful forge. The distal taper is especially impressive with a very thick spine that tapers out very nicely. The edge is really thin and the out of box sharpness is amazing. We strongly recommend this model if you are looking for a tall gyuto with nice weight and a flat profile.

This knife is made by hand in a traditional Japanese workshop with more than 400-year-old traditional technique of making knives. It was founded in 1973 by Haruyoshi san in Susaki, Tosa. Today the work is led by Tsuyoshi san who is the second generation of blacksmiths in his family. Tsuyoshi san has studied under several of Japan's leading blacksmiths and sharpeners for more than 20 years, and he has improved the perfection of grinding and sharpening.
