Hinoura is one of Japan’s premier blacksmiths, crafting his knives in the small town of Sanjo in western Japan. All knives are hand-forged and no blade leaves Hinoura's hands until it is razor-sharp and forged to perfection. This series uses Aogami Super carbon steel, hardened to 64 HRC. It is an exceptionally hard carbon steel that maintains its edge well and can be honed to razor-sharpness. Hinoura’s knives are immensely popular, and the lead time for delivery is very long.
The blade finish is called nashiji kurouchi, giving it a raw and beautiful surface with a black-oxidized coating. The handle is octagonal.
Note: Carbon steel is not stainless. Over time, the blade will develop a beautiful patina, though the black kurouchi finish provides good protection. If the blade is left wet, rust will develop. Additionally, the thin and hard blade can be damaged if used to chop hard materials, bones, or frozen foods.
