This knife is hand forged in shirogami#2 carbon steel.
Kataba is the japanese word for single beveled knives. They are ground on the right side and slightly concave on the left side. This type of knife is widely used in the japanese kitchen while not so popular in regular western households. This line of knives is professionally oriented while maintaining a great price point. They are hand forged in shirogami#2 steel and uses a ho handle with buffalo horn ferrule. A great pick up!
Note: Carbon steel is not stainless! Be sure to wipe the blade dry immediately after use to avoid rusting of the blade.
