Shiro Kamo is a highly skilled blacksmith from the renowned 'Takefu Knife Village' in Japan. These knives are handcrafted from Aogami #2 carbon steel, which Shiro hardens to an impressive 64 HRC. The blade features a dark kurouchi finish and a D-shaped handle. It is tapered, meaning it is thickest near the handle and gradually narrows towards the tip. This series has a bold and striking appearance, yet the edge is extremely thin, delivering unparalleled sharpness and exceptional cutting performance. It is one of our most popular knife series!
Carbon steel is not stainless, and Aogami #2 is no exception. However, the black kurouchi finish provides excellent protection against rust and patina. The lower part of the blade will develop patina much faster than the dark upper portion. Be sure to dry the knife thoroughly after use. Also, keep in mind that certain ingredients (such as citrus and tomatoes) can cause noticeable patina on the blade.
This series is called Kuroi Ryuu (黒い竜), which means Black Dragon in Japanese.
