The knife feels comfortable in hand, with a weight that’s well-suited to its intended use. It’s thin and light, cutting like a laser. The blade features an Aogami #2 carbon steel core (also known as Blue #2), hardened to 63-64 HRC. This core is laminated with 10 layers of steel, creating a beautiful Damascus pattern. The blade takes an extremely sharp edge, which is easy to maintain and offers superb cutting performance.
Over time, the Aogami carbon steel will develop a beautiful patina. The blade should be dried thoroughly after each use to avoid rust. Even with careful drying, the appearance will evolve based on the ingredients used. This is a sharp knife with a lot of character.
Note: Thin Japanese blades are highly sensitive to lateral pressure or twisting. Please cut with care to prevent damage to the delicate edge.
Note: Aogami #2 is carbon steel and is not stainless. The iron cladding on the blade sides also needs to be kept dry to prevent rust over time.
