Nakiri | Tokyo Style



Tokyo Style Nakiri with a 165 mm blade
Tokyo Style is still a classic nakiri but a tad different in its design. The blade is slightly lower at the heel, while the front section is slightly taller. Additionally, the handle is tilted upward by a few degrees. Together, these design elements make the knife feel more agile when chopping with the front part of the blade.

The blade has a core of Aogami #2 carbon steel (also known as Blue #2), hardened to 63-64 HRC. This core steel is laminated with 10 layers of steel, creating a stunning Damascus pattern. The blade takes an incredibly sharp edge, is easy to maintain, and delivers outstanding cutting performance.
Over time, the Aogami carbon steel will develop a beautiful patina. To prevent rust, always dry the blade thoroughly after use. Even with careful drying, the appearance of the blade will change depending on the ingredients used. A sharp knife with a lot of personality!
Note: Aogami #2 is a carbon steel that is not stainless. The iron cladding also requires proper care to prevent rust over time.
