Shiro Kamo 'Kazan' is a hand-forged precision tool from one of the most renowned blacksmiths in Takefu, Japan. Shiro Kamo forges thin, fine blades with well-balanced tapering and excellent balance. The thin edge made of Shirogami#2 carbon steel takes an incredibly sharp edge, and the high carbon content makes the knife easy to hone and sharpen. The core steel is clad with a layer of soft iron on both sides. This cladding is finished with blackened Kurouchi and a light Nashiji finish, which means "pear skin" in Japanese and gives the blade a slightly rough, raw texture. The handle is octagonal and made of Renghas wood.
Shiro Kamo was one of the first blacksmiths we got to know, and to this day, his knives remain one of our most popular brands.
Note: Shirogami#2 is not stainless. The cladding around the core steel is made of iron and is also not stainless. Always dry the edge thoroughly to prevent rust, and consider applying a bit of oil to the blade to enhance its shine and protect against rust. Since the steel is reactive, a patina will develop relatively quickly. Cutting proteins will result in a blue and green patina, while vegetables tend to create a grayish or brownish patina.
