Bunka


Bunka, an all-purpose knife with a blade measuring 174 mm from tip to heel. The blade is made of Aogami Super, a hard carbon steel known for excellent edge retention and good rust resistance. Surrounding the hard core steel (64 HRC) is a layer of stainless steel with a black hammered finish.

Tsunehisa’s Japanese knives made with Aogami Super carbon steel are extremely hard and razor-sharp out of the box (64 HRC). The knife feels comfortable in hand, offering a responsive and well-balanced cutting experience. Unlike knives by makers such as Hinoura or Yoshikane, this model is slightly less delicate thanks to a thicker edge geometry. This makes it less prone to damage, though it may not glide as effortlessly through hard produce like potatoes or carrots.
Note: Aogami Super is carbon steel and is not stainless. While the blade sides are stainless, the edge itself must be kept dry to prevent rust over time.
