Shiro Kamo is a highly regarded blacksmith from the acclaimed Takefu Knife Village in Japan. These knives are handmade in Aogami #2 carbon steel, and Shiro hardens them to an impressive 64 HRC. The blade features a dark kurouchi finish and a D-shaped handle. The blade is tapered, meaning it’s thickest near the handle and gradually thins toward the tip. Knives in this series have a bold, rugged look, yet the edge is extremely thin and offers unmatched sharpness and cutting performance. This is one of our most popular knife series!

Note: Carbon steel is not stainless, and Aogami #2 is no exception. However, the black kurouchi finish offers good protection against rust and patina. The lower part of the blade will patinate more easily than the blackened portion. Always wipe the knife dry after use. Be aware that some ingredients (citrus, tomato, etc.) can visibly affect the blade’s appearance.
We call this knife Kuroi Ryuu (黒い竜), which means Black Dragon in Japanese.
IMPORTANT: Aogami #2 is a carbon steel and is not stainless. The iron cladding on the blade also needs to be kept dry to avoid rust over time.
