The Ajikataya series is a collaboration between Mutsumi and his father Tsukasa Hinoura. The knives are crafted from Shirogami#2 carbon steel, renowned for its hardness (63 HRC) and ability to achieve a razor-sharp edge. The Hinoura family is one of Japan's premier knife-making families, with all knives hand-forged to perfection.

The blades in the Ajikataya series feature a beautiful nashiji-kurouchi finish, characterized by a coarse, black-oxidized surface that gives a rustic and genuine feel. The final edge is adorned with a stunning kasumi finish, which enhances the contrast between the polished core steel and the softer outer layer. This misty and silky kasumi finish is rare and elevates the knife’s aesthetic appeal.

Care instructions:

  • Shirogami#2 is not stainless. The cladding around the core steel is made of iron, which is also not stainless. Always dry the edge thoroughly to prevent rust.
  • Apply a bit of oil to the blade to enhance its luster and prevent rust.
  • Due to the reactive nature of the steel, a patina will develop relatively quickly. Cutting proteins will result in a blue and green patina, while vegetables will produce a gray and brown patina.
