A Japanese chef's knife, gyuto, with a 220 mm long blade and a tall blade (56 mm). This particular piece features a handmade custom handle crafted from Turkish walnut with a green maple spacer.
The Kurokaze series presents a wonderful Japanese chef's knife, gyuto, with substantial weight and excellent craftsmanship. We are particularly impressed with the tapering. The knife has a thick spine near the handle, which then tapers out beautifully. This is the knife for those seeking a high chef's knife with good weight, a thin edge, and a flat profile. We highly recommend it!

This knife is handcrafted in a traditional Japanese workshop that utilizes a knife-making technique over 400 years old. The workshop was founded in 1973 by Haruyoshi-san in Susaki, Tosa. Today, the work is led by Tsuyoshi-san, the second-generation blacksmith in his family. Tsuyoshi has studied under several of Japan's finest blacksmiths and sharpeners for over 20 years and now possesses impressive skills in both grinding and sharpening.
