Gyuto
A Japanese gyuto knife with a 210 mm long blade
With a fantastic and vibrant design, the Hatsukokoro Hayabusa truly stands out from the crowd. The blade is called 'rainbow damascus,' and it achieves its spectacular appearance by combining multiple layers of copper, brass, and stainless steel. The cutting edge is made of aogami#2 carbon steel, providing an impressively sharp edge that is easy to sharpen. The entire blade has been given a hazy finish with a mirror polished edge. The handle significantly contributes to the exclusive feeling. The wood used is stabilized birch root, which has been shaped into an octagonal form.
Core Steel: Aogami#2 carbon steel (63 HRC).
Cladding: Copper, brass, and stainless steel.
Weight: 174 grams
Blade Height: 46 mm
Blade Length, tip to heel: 214 mm
Blade Thickness at the base: 2.5 mm
Thickness in the middle: 2 mm
Note: Carbon steel is not stainless, so the edge should always be dried thoroughly after use. Some oxidation of the blade's surface may occur over time, such as copper darkening. We recommend drying the blade after use and polishing as needed. Applying a little oil to the blade never hurts and gives the blade a beautiful finish.
