One of our most beloved knives — the Kazan Bunka — features a 185 mm long blade paired with a beautiful handle in satin wood.

Shiro Kamo ‘Kazan’ is a hand-forged precision tool from one of the most respected names in Takefu, Japan. Kamo-san crafts thin, elegant blades with refined tapering and excellent balance. The razor-thin edge in high-carbon Shirogami #2 steel takes an incredibly sharp edge, and the high carbon content makes it a joy to sharpen and hone.
The core is clad on both sides with soft iron, given a black-forged kurouchi finish and a lightly textured nashiji surface. Nashiji means "pear skin" in Japanese, referring to the rustic, slightly rough finish on the blade sides.
Shiro Kamo was actually one of the very first blacksmiths we connected with, and to this day, his knives remain among our most popular offerings.
Note: Shirogami #2 is a reactive carbon steel and not stainless. The cladding is also made of iron, which means the entire blade will react with moisture and food acids. Always dry the blade thoroughly after use, and we recommend applying a light coat of oil to maintain its luster and prevent rust. Over time, a patina will develop — blue and green hues when used on proteins, and gray to brown tones when used with vegetables.
