Santoku with a 168 mm blade. A hand-forged carbon steel knife with exceptional steel and a rustic, simple finish.
In Tosa, the philosophy surrounding hand-forged knives differs somewhat from cities like Sakai and Sanjo. Here, the simplicity of the tool is valued, with less emphasis on uniformity and finish. What you can expect from this knife is a beautifully rustic finish and an extremely sharp edge. The edge is not as thin and delicate as many other Japanese knives, but it is also less prone to damage. For those seeking perfection, you’ll notice that the profile isn’t entirely even and the grind isn’t always smooth. It’s simply a hand-forged knife meant to be used without scrutinizing every detail too closely. This philosophy is referred to as wabi-sabi: an aesthetic that appreciates the beauty of the imperfect, transient, and natural.

This series is hand-forged in the city of Tosa by a single smith working alone. He uses Aogami #2 carbon steel, hardened to 63-64 HRC. This makes it extremely hard and capable of being honed to an incredibly sharp edge. This is a knife for those seeking a unique piece that is the polar opposite of mass production and glossy packaging.
The handle has an octagonal shape and is made of Bubinga wood.
Important: Carbon steel is not stainless! Be sure to dry the knife after use to prevent rust.
