Santoku


Santoku knife with 184 mm blade length (tip to heel).
This knife is hand-forged from stainless ATS34 steel, hardened to 61 HRC, offering excellent edge retention. The core steel is cladded with stainless nickel damascus that has been polished to a mirror finish. Yauji spends significant time on polishing, ensuring his knives truly stand out. The handle is octagonal and made of ebony.

We first met Yoshihiro Yauji in February 2014 when he visited us in Sollentuna alongside Shiro Kamo and Masanobu Okada. We took them to Bergendals Herrgård, where they were served pickled herring and potatoes, followed by mashed root vegetables and pork. As we recall, the culinary experience was met with mixed reactions, but Yauji seemed to appreciate our Swedish classics.
At that time, Yauji was working as a blacksmith under Master Okada in Takefu. Since 2019, he has been forging knives under his own name, and his craftsmanship is truly impressive. These blades are so delicate that slicing a potato becomes a pure joy. The weight falls into the mid-range, and the blade is incredibly thin. The finish is superb, and the grind is perfectly even. We cannot point out a single flaw—everything about this knife is outstanding.
