Katayama is the name of the blacksmith behind these eye-catching knives. Katayama has worked for Takeshi Saji in Takefu for many years but has become 'independent' since 2021. He now designs his own knives and is a interesting new player on the market. You can clearly see the connection to his teacher's style, especially in the technique of etching the blades with deep contrast and rustic structure. The blade itself consists of 32 layers of steel that enclose the core of stainless VG10 steel. The edge is impressively thin and the knife feels nicely balances in hand. The handle is octagonal and is made from keyaki wood with bolster in macassar ebony.
