A yanagiba is used to prepare sashimi (raw fish). The length of the knife is crucial for the technique, which requires a single clean pull to slice the fish. This technique is believed to cause the least damage to the fish compared to a sawing back-and-forth motion.
Kai Shun Pro features an exceptionally fine blade made of VG-10 stainless steel. The handle is "D"-shaped, providing excellent ergonomics. The latest version of the Kai Pro series has a decorative design etched on the blade, with its underlying part being entirely mirror-polished.
