Yoshimi Kato is a highly skilled blacksmith from Takefu in western Japan. This series is hand-forged with a Damascus steel that is truly spectacular. The core steel is a stainless powder steel called SG2. It is very hard and retains its sharpness for a long time. What also stands out are the thin blades that glide through ingredients with ease.
