Shiro Kamo is a skilled blacksmith from the renowned 'Takefu Knife Village' in Japan. These knives are handcrafted in Aogami#2 carbon steel, and Shiro hardens them to an impressive 64 HRC. The blade has a dark finish, known as kurouchi, and a D-shaped handle in red sandalwood. The blade is tapered, meaning it is thickest near the handle and narrows towards the tip. Knives in this series have a robust appearance, while the edge is very thin, delivering unparalleled sharpness with fine cutting properties. This is one of our most popular knife series!
We call the knife "kuroi ryuu" (黒い竜) in Japanese, which means Black Dragon.
Note: Carbon steel is not stainless. Over time, the blade will develop a beautiful patina, even though the black kurouchi finish provides good protection. If the blade is left in moisture, rust may occur. Also, keep in mind that the thin and hard blade may be damaged if used to hack hard ingredients, bones, or frozen food.
