Sukehisa Gyuto 307 mm – Old Stock!
A substantial Japanese chef's knife with a 307 mm blade, manufactured many years ago and preserved in its original packaging. This is a classic gyuto from Sukehisa, featuring a long, robust blade made from solid Japanese carbon steel and a traditional Western-style wooden handle with three brass rivets.
A substantial carbon steel gyuto with a classic design, original packaging, and a history stretching back many years.
We acquired a number of these knives through a friend in Takefu, Japan. They come from old production stock that has been tucked away for several decades. These knives have a charming, old-school character that sets them apart from much of what is manufactured today.
The blade is made from a single layer of carbon steel, without any softer cladding. Carbon steel is highly regarded for its ability to take an exceptionally sharp edge and for being relatively easy to sharpen. The steel is not stainless and will gradually develop a natural patina over time.
With a blade measuring just over 30 centimetres and a weight of 265 grams, this is a robust, hardworking chef's knife with plenty of reach and cutting surface. It is particularly well suited to those who appreciate large knives and want to work efficiently with bigger ingredients without having to worry excessively about damaging the edge.
