HADO Shiosai features a stainless VG-10 core clad in softer stainless steel. The blade has a thin grind, resulting in a very sharp edge with good edge retention while remaining relatively easy to maintain.

The name Shiosai roughly translates to “the sound of the tide.” This is reflected in the blade’s hammered tsuchime finish, with a pattern inspired by waves and splashing water. The blades feature a high, flat grind that provides a smooth cutting feel with very little resistance through ingredients. The spine and heel are rounded and polished for increased comfort in the hand.

Shiosai combines excellent cutting performance with stainless steel and HADO’s high level of finish and attention to detail. An easy-to-maintain series with a distinctive character and excellent cutting performance.
