Carving knife, sujihiki, with a 274 mm long blade.

This luxurious piece is handmade in Saji's forge in Takefu, Japan. It is a limited edition with a wooden handle and transparent epoxy. The hand-forged blade consists of several layers of nickel-damascus steel with a core of stainless powder steel. The knife comes in a beautiful kiribox with a red interior.

Rinse the blade especially thoroughly after contact with salty foods.

Stainless steel is highly resistant to corrosion, but it is not completely rust-proof. Salt and moisture left on the blade can, over time, cause small rust spots or pitting.
