This gyuto is forged by Okada in Takefu, a region with a long and vibrant tradition of Japanese knife making.

The core of the blade is made from Shirogami (White Paper Steel), a classic Japanese carbon steel valued for its fine grain structure and ability to take an exceptionally sharp edge. The core is clad in Damascus-forged iron, giving the blade a lively, organic pattern. Since both the core steel and the cladding are reactive, the blade will gradually develop a natural patina and an increasingly individual character with use.

Okada’s gyuto has a slightly heavier construction, substantial weight and a solid feel in the hand – what is commonly referred to as a workhorse. The blade has a clearly defined shinogi and a convex-ground edge. This creates a robust blade geometry while still allowing the knife to cut efficiently and helping food release more easily from the sides of the blade.

With its 210 mm gyuto profile, this is a highly versatile chef’s knife. Its weight and more substantial construction make it particularly well suited to larger quantities of vegetables, root vegetables, meat and other heavier kitchen tasks, while the fine Shirogami edge provides plenty of precision when needed.

The knife is fitted with a traditional Japanese wa-handle made from keyaki wood, whose warm tone and pronounced grain complement the light Damascus blade beautifully.

A characterful, hand-forged gyuto for those who prefer a substantial Japanese chef’s knife with weight and presence over the thinnest and lightest blade geometry.

Care & maintenance

Carbon steel
Carbon steel is not stainless and therefore requires a little more care than stainless steel. Always clean and dry the knife thoroughly immediately after use. This is especially important after cutting acidic foods such as citrus fruits, tomatoes and onions, as the acid can quickly react with the steel.

Do this:

Clean the knife immediately after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Dry the blade thoroughly after cleaning.
For long-term storage, the blade can be protected with a thin layer of tsubaki oil.

Avoid:

Dishwashers.
Leaving the knife in water or allowing it to remain damp.
Leaving food residue, especially from acidic ingredients, on the blade.

Patina, a completely natural oxidation of carbon steel

As carbon steel is used, the blade will gradually change colour and develop a patina. Depending on the foods you cut, it can take on shades of grey, blue, brown and sometimes even almost rainbow-like tones.

Patina is a natural reaction between the steel and food and is not the same as rust. In fact, an established patina provides some protection for the steel and makes the blade less reactive over time.

Rust, on the other hand, should be removed. It is often orange or reddish-brown and may feel rough on the surface of the blade. A patina is normally smooth and is a natural part of owning and using a carbon steel knife.
