Sujihiki with a 24 cm long blade

Steel: VG-10 with a hammer-forged Damascus steel cladding (60-61 HRC)

Ohishi produces very fine and well-made chef's knives. The knives have good weight and excellent balance. They are also very affordable and delivered razor-sharp.

The blade is made from the very popular and high-performance VG10 steel. Around the core steel are 17 layers of softer steel, creating a beautiful Damascus pattern. The upper part of the blade has been hammer-forged and polished to a semi-glossy finish.

For the handle, mixed pakka wood has been chosen, giving a beautiful blend of brown and black. The handle is very well weighted and comes with 3 rivets, a bolster, and a full tang.

Clean the knife after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Rinse the blade especially thoroughly after contact with salty foods.

Leaving salt or moisture on the blade for extended periods.

Stainless steel is highly resistant to corrosion, but it is not completely rust-proof. Salt and moisture left on the blade can, over time, cause small rust spots or pitting.
